Modified air packaging (or fresh lock packaging) is an anti-gas
material that seals meat food under changing gas environment to
inhibit the growth, reproduction and biochemical activity of
spoilage microorganisms and extend shelf life. Modified atmospheric
packaging gases are usually carbon dioxide, oxygen and nitrogen, or
various combinations of them. To preserve meat for a long time, the
three gases must be kept in the right proportion. The fresh-keeping
effects of each gas on fresh meat are as follows:
(1) Oxygen can maintain the brightness of the muscle, and the
oxygen in the gas mixture can only keep the meat red when it is
higher than 50%.
(2) Carbon dioxide is colorless and tasteless, and mainly plays an
antibacterial role in aerated packaging. It can inhibit the
oxidative rancidity and fungal growth of meat.
(3) Nitrogen is widely used in inflatable packaging, stable in
nature, and has no effect on meat color and microorganisms. Mainly
used as filler.
